Chinese take out at Home

Friday is our family movie night and the time to relax and enjoy. The dinner is always something, which we can eat in the cozy couch while watching a movie. Take out can be one option  but I encourage home cooked meal with  a take out  look. I came across a  recipe on Baking beauties when I  initially went gluten free. That dish became one of our favourite. I started pairing the dish with some healthy salad for a wholesome dinner. Next time you have friends for a movie, try this. Two pounds of fried chicken breast pieces and salad is good for 5-6 adults.

I have made minor changes according to our taste.


FRIED CHICKEN  with sweet and sour sauce
Ingredients:
 1cup rice flour mix or all purpose flour
1cup corn starch
1tsp baking soda
1 tsp baking powder
1tsp sugar
1&1/3 cup water or more
oil for frying
2lbs boneless chicken breasts cut into 2-3" pieces
salt and pepper to taste and is must
Friday morning
Method: In a bowl combine rice flour mix, cornstarch, baking powder, baking soda, sugar, salt, pepper and water until smooth. Put all the chicken pieces in the batter. Cover with cling wrap and leave it in the fridge.
  


Friday evening
Bring the dipped chicken to room temperature (30-40 minutes). Add 2 tbsp water if required. Heat oil in a wok.  Drop dipped chicken pieces in hot oil and fry until golden. Remove on a paper towel. Serve hot fried chicken  with sweet and sour sauce.




SWEET AND SOUR SAUCE
You can make the sauce a day before.
Ingredients:  3-4 tsp  ketchup
1/2 tsp soy sauce
1/3 cup white vinegar
1 cup white sugar
3/4cup water
1/2 cup brown sugar
2 tbsp corn starch
some extra water for mixing cornstarch
Method: 
In a saucepan combine the first 6 ingredients. I have added ketchup just for color you can add more as the original recipe calls for 1/2 cup. Bring it to boil whisking constantly. Reduce heat to medium low and continue to simmer stirring continuously.            
       Dissolve cornstarch in a small bowl with 2-3 tbsp water. Add the smooth cornstarch mix to the simmering sauce and stirring constantly.Cook till it thickens. Remove from heat. Set aside to cool and serve with fried chicken  and your favorite salad.

  1. Looks very good! I will make some tomorrow...in the recipe for the chicken balls you have written baking powder but not the quantity? How much please.
