What do you do when a food is recalled?
I did not know walnuts have been recalled until I bought walnut muffins from farmers market. I was appalled when my daughter told me to throw away the muffins as there was possibility of E coli in them. There is no return policy in the local food market otherwise I would have returned it. I don't understand, why do they even sell it if it has been recalled? I told my daughter that it was OK to eat these as E coli grow only in moist conditions and walnuts are dry. She showed me the news clipping and made me throw away the muffins. I always keep cake or muffins handy for snack or those rush breakfasts. So, now I had to bake something at home.
Fall is not officially here, but the temperatures have dropped and this just seemed to be the perfect time to welcome fall a little early with Orange cranberry muffins. I soaked cranberries overnite in orange juice to make muffins the next day.
I don't remember from where I got this recipe, its in my recipe notebook. I used to make it with all purpose flour. The original recipe calls for 1 cup of sugar, 2/3 cup veg. oil and 3/4 cup milk. With rice flour mix I have reduced the liquid amount. If you want to make it with APF, follow accordingly but 3/4 cup sugar is good for both kinds. when you make it with all purpose flour the cranberries are visible on top but with rice flour mix, they sank at the bottom. I might try with some other flour or have to omit milk and see how it works out, till then enjoy these. They are full of great flavor combo of orange and tangy cranberries.
ORANGE CRANBERRY MUFFINS
Ingredients:
2 cups white rice flour mix
3/4 cup sugar
1/2 cup milk
1/3 -1/2 cup canola oil
3/4 cup dried cranberries
1 orange
1 large egg
1&1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Method:
The night before you make the muffins grate the orange zest. Squeeze juice from the orange. Mix the zest, juice and cranberries in a bowl. Cover and refrigerate overnight.
Next day prepare 12 muffins using soaked cranberries. Line a muffin tray with muffin cups. In a large mixing bowl sift together the flour, sugar, baking powder,baking soda and salt. In a small bowl, beat the eggs slightly. Add milk and oil and the orange mixture to the dry ingredients.
Mix until just combined and moistened. Spoon batter into prepared muffin cups evenly.
Bake for 20- 25 minutes or until golden brown.
Check the muffins with toothpick. If the toothpick inserted into the center comes out clean the muffins are done. Let it cool for 5 minutes in tray.
While you are waiting for the muffins to be ready, listen to Bollywood remix of Lady Gaga's song.

Muffins look soft, perfect and delicious. Nice bake.
